  • Three cups of granulated sugar
  • Two cups of water
  • Two tablespoons of vanilla extract (or one vanilla bean, split open)
  • Eight to twelve tablespoons of your favorite coffee (depending on your preference)
  • Three to four cups of vodka (for cleaner, more subtle flavor) or rum (for sweetness & depth)

Directions

  1. Gather your ingredients together.
  2. In a small saucepan over medium heat, combine 3 cups of sugar, 2 cups of water, and 2 tablespoons of vanilla extract (or 1 vanilla bean, split open). Bring to a boil and stir until the sugar is completely dissolved. This will create a simple syrup.
  3. Once mixed together, lower the heat and simmer gently. When the sugar solution is reduced to about half, remove the pan from the heat.
  4. Stir in 8 to 12 tablespoons of coffee. Allow the mixture to cool down.
  5. Pour the mixture into a sealable glass jar or bottle, along with your three to four cups of vodka or rum.
  6. Shake well and store in a cool, dark area for approximately 10 days. Make sure to give the container a good shake every day or two.
  7. After ten days or more, open up the bottle or jar and pour the liqueur through a fine-mesh strainer or cheesecloth into another container, such as a bottle or jar. This will remove all the granules of coffee from the mixture, along with any bits of vanilla bean.
