This Ethiopian Yirgacheffe is processed using a unique "super" natural anaerobic process, where the fresh coffee cherries are sealed into carbon fiber drums for several days, causing a natural fermentation of the coffee fruit and making the sugars and natural fruity flavors of the cherry penetrate deep into the hard coffee bean center.
When roasted delicately and deftly, this Ethiopian explodes into profound stone fruit, jammy and floral tones. Unbelievably, it tastes like a fine Yirgacheffe coffee except with a magnified intensity of flavor. If you didn't know this coffee was unflavored, you might be tempted to think someone added a little fruit or jasmine essence to the brew!
This amazing bean also received the outstanding Bronze Medal award from the Global Coffee Association in the experimental processing category.
