The CO2 Method
The CO2 method uses liquid carbon dioxide under high pressure inside a sealed chamber. The pressurized CO2 dissolves the caffeine and carries it out of the beans while leaving the larger flavor molecules untouched.
Producers consider this the most precise method because it targets caffeine almost exclusively. The technique costs more to run, which is why it appears mainly in premium decaf products.
