First, boil water — and be sure to start with cold, filtered water, preferably spring water, so there are as few potential contaminants as possible.

If you have a thermometer, measure the hot water temperature to ensure it is perfect for your cup of Darjeeling Tea. The best temperature for Darjeeling tea leaves is between 195 and 205 degrees Fahrenheit.

Then, add one tablespoon of tea leaves to each cup you intend to drink or serve. Then, for three to five minutes, steep the tea until it reaches a light gold or dark bronze, according to your preference.

Other flush teas of the Darjeeling variety are better suited to be mixed and blended, and can be determined by the color of the tea leaves. 

While first flush teas are light in color, since they spend less time undergoing the oxidation process, later flushes have a darker color to their leaves.

As mentioned previously, Darjeeling tea is produced during different "flushes". A flush is the time of year when tea leaves are picked and harvested for production. Different flush teas tend to vary in flavor due to being grown and picked under different conditions throughout the year.

The first flush teas, which are picked after the tea plant's winter dormancy and during the Spring, produce the lightest and gentlest brew of tea leaves.

Second-flush teas are picked a few months later. Due to the distinctive flavor that the leaves acquire as a result of leafhopper and moth populations attacking them, the second flush is distinct.

This forces the tea plants to produce a defensive compound that begins the oxidation process and helps create a muscatel flavor when the leaves are brewed.
