This month we have the Panama Boquete Classico - the second Panamanian coffee that we've offered since the start of our Coffee of the Month Program in 2011. The town of Boquete is becoming increasingly famed for it's coffee production, so if the pedigree of this coffee is anything to go by, the Classico should be a coffee to remember!
Roasted Beans:
Choir Monk: These beans look very interesting - I can see quite a number of peaberries mixed in - unusual beans that are round, rather than having one flat side. I can smell sweet, almost freshly baked notes.
Lay Monk: Good observation! Br. Roaster roasted these beans relatively slowly, to temper the sometimes overbearing acidity and develop the sweetness of the beans. I can detect herby, woody hints. |

The Tasting:
Choir Monk: If the smell of the beans is anything to go by, the Boquete Classico should be a great coffee!
Choir Monk: Here are my tasting notes:

Aroma: Honey, suggestions of charred cedar.
Acidity: Rounded, red-apple acidity.
Aftertaste: Delicate aftertaste - the floral and chocolate notes remained after the other flavors faded.
Body/Mouthfeel: Medium-full body.
Complexity: Very good complexity. Honey, with floral and cedar hints, backgrounded all the while with a defined chocolate theme.
Darkness: Medium. |
Choir Monk: I was very impressed with this coffee - I think it had a finesse rarely found, even among fine coffees.
Lay Monk: I think so too! Here are my detailed notes:
Aroma: Honeysuckle, freshly-hewn timber.
Acidity: Around a medium acidity.
Aftertaste: Clean; almost weightless, chocolate and honeysuckle notes were evident.
Body/Mouthfeel: Very smooth, medium to medium-full mouthfeel.
Complexity: Intricate and detailed - very good! There were delicate floral tones that I really enjoyed, also hints of melon and that ubiquitous chocolate strain that held it all together.
Darkness: Medium darkness.
Conclusion:
Choir Monk: Well, I think the Panama Boquete Classico is one of the finest Central American coffees I've tasted in quite some time. While recent offerings of ours have dominated the cup with broad strokes of power and intensity, the Boquete instead allures with gentle touches of floral and fruit.
Lay Monk: I couldn't sum it up better myself! I personally found the Boquete Classico to be very engaging. The subtle sweetness alone is enough to make it rank very highly for me.
Choir Monk: In conclusion:
Lyrical and expressive, the Panama Boquete Classico presents an alluring complexity that unfurls with each successive sip. The ripe acidity quickly defers to the overarching chocolate tone, while the delicate honeysuckle and herbal notes combine to add detail to this truly multifaceted Central American Gem.
